Guides to eating your way around each destination, and how to judge a food tour before booking one.

A food tour is worth most at the start of a stay, when it can teach you how a city eats: which meals matter, at what hours, and what to order in the places you will walk past every day afterwards. Judged purely as a meal it is rarely good value; judged as an introduction that changes the following week of eating, it can be the best-spent morning of a trip.

The variables that decide quality are visible before booking. Group size is the most important, since a walking group beyond about a dozen people cannot fit into small premises and stops working as a conversation. Look for a stated route and number of tastings, whether drinks are included, how much of the time is spent walking, and whether the guide lives in the city. Tours built around venues chosen for their capacity to seat groups tend to be less interesting than those built around a market and a few counters.

Practical points are easy to overlook. Many markets and family-run kitchens close on a set day or shut by early afternoon, so a tour's timing tells you something about where it can go. Dietary restrictions should be raised at booking rather than on the day, as substitutions are often impossible. Assume the tour is a full meal and plan the rest of the day around it.
