Café Santiago (Francesinha)

Café Santiago, on Rua de Passos Manuel in Porto's Baixa, has served francesinhas since 1959 and is widely considered by Porto locals to make the definitive version of the city's signature sandwich. The recipe is unfussy but exacting: layers of cured meats and sausage between slices of bread, covered in melted cheese and a thick, spiced tomato-and-beer sauce, usually finished with a fried egg on top and a side of chips. Unlike the more design-forward cafés that have popularised the francesinha for visitors, Café Santiago keeps a plain, functional dining room — Formica tables, quick turnover, and a menu that barely strays beyond its specialty. The atmosphere is loud and fast rather than leisurely, closer to a canteen than a restaurant, and that no-frills approach is part of its appeal to locals who come purely for the sandwich. Because it is walk-in only and extremely popular with both residents and tourists, queues build quickly around lunchtime; arriving before noon on weekdays is the most reliable way to get a table without a long wait. The restaurant closes on Sundays, so weekday visits are the safer bet.
