The izakaya concept — a Japanese drinking establishment where food plays an equal role alongside sake and cocktails — becomes in Schulson's interpretation an elevated gastropub experience: a sake and cocktail list of considerable depth, and a menu of Japanese small plates, sushi, and composed dishes that rewards both casual grazing and a more deliberate multi-course exploration. Otoro Tuna Nigiri, prepared with premium bluefin tuna belly, represents the kitchen's commitment to quality raw ingredients, while the Wagyu Beef Tataki — seared and sliced with acidic accompaniments — demonstrates the cooked side of the menu's range. The dining room occupies a dramatically designed space inside the Borgata, with a moody, low-lit atmosphere that contrasts with the hotel's casino floor energy. The sake list is one of the most extensive in New Jersey, spanning junmai, ginjo, and daiginjo grades with accompanying food pairing notes. Dinner service runs Wednesday through Sunday from 5pm.
