Asitane Restaurant

Asitane Restaurant, located alongside the historic Kariye Museum (Chora Church) in the Edirnekapı neighborhood of Fatih, is the only restaurant in the world dedicated to the systematic reconstruction of Ottoman imperial palace cuisine. Since the 1990s, the kitchen has worked with archival records of banquet menus from Topkapi Palace — transcripts from imperial kitchens documenting feasts prepared for sultans between the 15th and 19th centuries — to recreate dishes that had not been prepared in centuries. The process involves identifying ingredients no longer in common use, sourcing heritage varieties, and reverse-engineering techniques from poetic food descriptions in Ottoman documents. The result is a menu of extraordinary historical depth: saffron-braised lamb with dried fruits, stuffed quince with minced meat and cinnamon, pomegranate-dressed chicken, and sweet rice preparations flavored with rosewater and mastic. The dining room occupies a restored Ottoman building adjacent to one of Istanbul's finest Byzantine monuments, with a courtyard garden that operates seasonally as one of the city's most atmospheric outdoor dining spaces. Asitane attracts historians, food scholars, and curious travelers who wish to taste a cuisine that no longer exists elsewhere.
