Adıyaman is a province in Southeastern Anatolia, Turkey, set in the upper Euphrates basin between the Taurus foothills and the Mesopotamian plains. It is best known as the gateway to Mount Nemrut (Nemrut Dağı), the UNESCO-listed mountaintop sanctuary where colossal stone heads guard the 1st-century-BC tomb of King Antiochus I of Commagene. The province also holds Roman bridges, royal tumuli, and rock-cut ancient cities, alongside a distinctive cuisine that includes the local çiğ köfte and Adıyaman tava.
Adıyaman sits in Southeastern Anatolia and its food is unapologetically meat-forward and bulgur-rich: the province claims to be a birthplace of çiğ köfte, the hand-kneaded raw bulgur-and-meat speciality, and is equally known for Adıyaman tava (a meat-and-vegetable tray stew), generous lahmacun, rib kebabs, walnut-stuffed içli köfte, and a sıra gecesi culture built around shared platters and music. Since the 6 February 2023 earthquakes devastated much of the city centre, the restaurant scene has been rebuilding, with a new commercial gravity forming in the Altınşehir district near Adıyaman University while landmark venues and the Kahta and Nemrut tourist corridor have largely reopened to support the province's tourism-led recovery. Eating here in 2026 means strong, honest, low-priced regional cooking served in a city still visibly under reconstruction.

Dining etiquette & tips
Navigate the local food scene confidently.
Çiğ köfte and dessert spots stay open late, often to midnight, while ciğer and breakfast salons open very early, from 5:30 to 7:00 AM
Most lokantas wind down by around 10:00 PM, so plan dinner before then
Bread (ekmek) is served free with most meals
Alcohol is uncommon outside some hotels such as the Rabat Resort and the Nemrut-area hotels; do not assume kebab houses serve it
Be patient with relocated and temporary premises after the 2023 earthquakes, and avoid raising the topic of losses with residents unless they do; tipping 5-10% is appreciated
- Vegetarian
- Limited but workable; çiğ köfte is frequently served meatless (etsiz) here, and there are mezes, gözleme, eggplant dishes, soups, and a full serpme breakfast. State 'etsiz' or 'vejetaryen' clearly
- Halal
- Effectively all local eateries are halal by default as pork is not served; alcohol availability is limited to some hotels
- Gluten free
- Difficult, as bulgur, wheat, bread, and pide dominate the cuisine; grilled meats with salad are the safer route, and awareness is low so communicate clearly
