Parador de Baiona

Parador de Baiona occupies the entire enclosure of the Castillo de Monterreal, a medieval fortress set on a rocky headland above the Atlantic in the town of Baiona (Bayona), Pontevedra province. The castle walls enclose roughly 12 hectares of promontory, with the hotel building, manicured gardens, an outdoor pool, a sheltered cove beach, and nearly three kilometres of coastal walkway all within the fortified perimeter. Baiona holds a distinctive place in Atlantic history: the caravel La Pinta sailed into this harbour in 1493, making it the first European port to receive news of Columbus's discovery of the Americas.

The hotel building is a Galician pazo-style manor house constructed within the castle grounds in a style sympathetic to Galician historic architecture, integrating stone towers, arcaded galleries, and interior courtyards. Rooms range from Standard to Superior, Sea View Suites with panoramic Atlantic outlooks, and Classic Tower rooms — located in the medieval towers with thick stone walls and deep-set windows that frame the sea. Furnishings follow the Parador network's characteristic combination of regional antiques, tapestries, and period-appropriate fittings.

The restaurant specialises in Galician coastal cooking: percebes, zamburiñas, centolla (spider crab), fresh fish from the Rías Baixas, and an Albariño wine list strong in Rías Baixas denominación wines. A spa with sauna and treatments is available for guest use. The outdoor pool is set within the castle gardens, and the hotel's sheltered cove beach is reached via stone steps from the castle walk. The combination of a genuinely dramatic Atlantic fortress setting with comfortable Spanish state-parador standards — attentive service, reliable regional cuisine — makes this one of the most distinctive properties in Galicia.
