Most Hakata ramen shops use ticket vending machines at the entrance — insert yen coins or notes, select ramen (押す), and hand the ticket to staff when seated. English menus are increasingly available.

Tip

Kaedama (替玉) means extra noodles added to your remaining broth — order by saying 'kaedama kudasai' when the bowl is almost empty. Most ramen shops charge ¥100–150 (~$0.70–1 USD) for kaedama.

Tip

Yatai stalls are cash-only and have just 6–8 counter seats. Sit next to a local and conversation is expected — stall masters speak some English. Bring small bills (¥1,000 notes).

Mentaiko makes an excellent souvenir but requires refrigeration — most shops pack it in insulated bags for 24-hour transit. Spicy version (karashi mentaiko) is more popular; mild (mentaiko) is slightly sweeter.
