The walls are papered floor-to-ceiling with photographs of the celebrated visitors who have made the pilgrimage—opera singers, film directors, politicians, footballers—but the kitchen's attention remains on the handmade pasta that has earned the restaurant its extraordinary reputation. Tagliatelle al ragù here is executed with the precision of long practice: the egg-yellow ribbons are rolled thin and dressed in the slow-cooked Bolognese meat sauce that bears no resemblance to the exported imitation. Tortellini in brodo arrives in a deep, clarified capon broth of striking intensity. Lasagne verdi al forno, striped green and white, is assembled in the traditional manner with béchamel, ragù, and a restraint that lets the pasta speak. The dining room is small and warm, with checked tablecloths, close-set tables, and a convivial noise level that builds through the lunch and dinner service. There is no menu theatre, no amuse-bouche, no deconstructed anything—Anna Maria's cooking is entirely confident in its tradition.
