Do

  • Learn a few words of Italian — even 'buongiorno', 'per favore', 'grazie', and 'mi scusi' go a long way
  • Try street food and eat where locals eat — ask 'Dove mangiano i locals?' to find the real spots
  • Participate in the evening passeggiata — a walk along the main street at dusk is a genuine local ritual in every Apulian town
  • Taste local products: buy olive oil, burrata, and taralli from local producers rather than supermarket brands
  • Visit churches free of charge — they are the region's greatest art galleries and most are open morning and late afternoon

Don't

  • Do not visit beaches in a rental car and leave valuables inside — car break-ins are common at Salento beach car parks
  • Do not drive into ZTL (restricted traffic zones) in historic centres without checking — fines of €80–200 are issued automatically by cameras
  • Do not order cappuccino after lunch or dinner — you will be served one but locals will notice
  • Do not rush meals — sitting for 2–3 hours at dinner is normal in Apulia. Requesting the bill too early is considered rude
  • Do not photograph women making orecchiette in Bari without asking — some are polite about it, others are not
  • Do not litter on beaches — the Blue Flag beaches of Apulia have strict cleanliness codes; fines apply
