The 1980 Marseille Bouillabaisse Charter specifies the exact fish varieties required—rascasse, grondin, and saint-pierre among others—and only signatory restaurants may legally claim the dish as authentic. The centrepiece tasting is a full bowl of charter-certified bouillabaisse at one such participating restaurant on the Vieux-Port, served with rouille and croutons.
