Liaoning is a province in northeast China on the Bohai and Yellow Seas, bordering North Korea along the Yalu River. It combines Shenyang's Qing-dynasty imperial heritage, Dalian's beaches and European-style squares, Dandong's view across the border, and a long Great Wall coastline at Hushan and Xingcheng. Liaoning is also the heartland of Dongbei cuisine: dumplings, barbecue, stews, and fresh Yellow Sea seafood.
Liaoning cooks Dongbei (Northeastern) food, defined by cold winters, big portions and strong Manchu, Korean and Russian influences, plus a long Yellow Sea and Bohai coast. Shenyang, the former Manchu capital, is known for boiled and pan-fried dumplings (jiaozi), shaomai, Korean cold noodles (lengmian) from the Xita district and hearty stews such as guobaorou (sweet-and-sour pork) and stewed pork with pickled cabbage. Dalian and the coast add shrimp dumplings, sea cucumber, abalone, scallops, sea urchin and grilled seafood; Dandong is famous for yellow clams (huang xianzi), Yalu River fish and Korean barbecue; Jinzhou is known for its street barbecue. Local beer (Xuehua, Dalian Kalun/Karun) is the usual drink, and Bingyu (ice wine) comes from Huanren in Benxi.
