Hebei is a coastal province in northern China that wraps around Beijing and Tianjin on three sides and meets the Bohai Sea to the east. It holds the UNESCO Chengde Mountain Resort, the eastern terminus of the Great Wall at Shanhaiguan and Laolongtou, the Beidaihe seaside resort, and the world's oldest open-spandrel stone arch bridge at Zhaozhou.
Hebei cuisine (Ji cai) is the everyday cooking of the North China Plain that surrounds Beijing and Tianjin, built on wheat flatbreads, donkey and lamb meat, freshwater and Bohai Sea seafood, and hearty braises rather than heavy chilli heat. Baoding and Hejian are famous nationwide for lu bi huoshao, the donkey-meat-in-a-crisp-flatbread snack summed up by the saying 'dragon meat in heaven, donkey meat on earth'; Zhengding and Shijiazhuang serve imperial-court leftovers such as Haojia pork ribs and Wangjia shumai; Chengde's mountain-resort kitchens turn wild game, mushrooms and venison into Qing-dynasty banquet dishes once served to the emperor; and Beidaihe and Qinhuangdao on the coast specialise in Bohai Sea shellfish, prawns and grilled fish. Portions are generous, flavours are savoury and vinegar-forward, and a full sit-down meal is inexpensive by Chinese standards.

Dining etiquette & tips
Navigate the local food scene confidently.
Type the Chinese restaurant name into Amap (高德地图) or Baidu Maps (百度地图); Google Maps is unreliable inside China.
Most stalls and small shops take only Alipay or WeChat Pay; the tourist version of Alipay links a foreign Visa or Mastercard.
Donkey-meat burger shops sell out of the freshest braised meat by late afternoon, so eat one earlier in the day where possible.
Menus outside tourist areas are usually Chinese-only; the Google Translate camera mode or a downloaded offline pack helps with ordering.
In Chengde, ask specifically for 'sai wai gong ting cai' (塞外宫廷菜) if looking for the mountain-resort imperial-cuisine style rather than generic Chinese food.
Seafood restaurants around Beidaihe price shellfish by weight; confirm the per-jin (500g) price before the catch is cooked.
- Vegetarian
- Limited outside big cities; stir-fried vegetable and tofu dishes exist on most menus. Say 'wo chi su' (我吃素) and ask for the dish to be made without meat stock or lard.
- Halal
- Widely available; Hebei has a sizeable Hui Muslim population and halal (清真) restaurants serving lamb and beef are common in Shijiazhuang, Baoding and Handan.
- Gluten free
- Difficult; wheat flatbreads, noodles and dumplings dominate the cuisine. Steamed rice and simple stir-fried vegetables are the safest fallback.
