The birria tacos are the defining dish: corn tortillas double-dipped in birria consommé and crisped on a griddle, filled with slow-braised beef birria that has been cooked for hours until it shreds at contact, and served alongside a cup of the consommé for dipping. The preparation requires significant kitchen time and the results are among the most labour-intensive items available in the Topeka dining scene at the price point. Chile verde — pork slow-cooked in roasted green chile and tomatillo sauce — is the kitchen's second most praised preparation, served with rice, beans, and fresh tortillas. Tamales are made in-house and available in both red chile and green chile versions; on weekends quantities are limited and sell out before midday service ends.
