Ardahan is a remote highland province in northeastern Turkey, sitting at an elevation of around 1,829 metres above sea level. Bordered by Georgia to the north and Armenia to the east, it is one of Turkey's coldest and least-visited provinces — a destination for travelers who seek raw wilderness, authentic village culture, and medieval history without the crowds. The province is centred on the Kura River valley, and its defining feature is the vast Çıldır Lake, which freezes solid in winter and transforms into a surreal snowscape where horse-drawn sleighs glide across the ice. Ardahan city itself is a modest market town, but the surrounding highlands, castle ruins, and Georgian-era stone churches make it a compelling base for adventure.
Ardahan's food culture is defined by its highland pastoral heritage at 1,829 m altitude. The province is one of Turkey's premier dairy regions — kaşar peyniri (aged yellow cheese), tulum peyniri (cave-aged goatskin cheese), and wildflower honey are the signature products. The defining cooked dish is kuymak, a rich molten blend of cornmeal and local cheese cooked in butter. Meat dishes centre on highland lamb — cağ kebabı (horizontal spit-roasted lamb) is the most celebrated preparation. Freshwater fish from Çıldır Lake (carp and velvet catfish) forms a secondary culinary tradition. The nearby Georgian border influences bread traditions and hospitality culture. Almost all dining is lokanta-style — simple, rotating daily menus, cash only, no English menus.

Dining etiquette & tips
Navigate the local food scene confidently.
Lokanta restaurants serve rotating daily menus from a steam counter — point at what looks good and ask 'bu ne?' (what is this?) if unsure. The full menu is available only 11:00–14:00.
All restaurants and markets are cash-only (Turkish Lira). Carry sufficient TRY for the full day — no ATMs in rural districts outside Ardahan city.
Tea (çay) is automatically brought after a meal at traditional lokanta and is included in the bill at no extra charge.
Dinner should be eaten by 20:00 — most restaurants close by 21:00 and stop taking orders by 20:30.
Guesthouse breakfasts are included in room rates and are a genuinely substantial spread of local cheese, honey, eggs, and bread — do not skip them.
Saturday market cheese and honey is cheaper than specialty shops — arrive before 09:00 for full selection direct from producers.
In village restaurants outside Ardahan city (Çıldır, Damal, Posof), confirm opening hours on arrival — seasonal closures are common.
