Amasya Pide ve Lahmacun Evi

Amasya Pide ve Lahmacun Evi is a wood-fired flatbread specialist on Atatürk Caddesi that has made the pairing of pide and lahmacun its entire identity. Pide — the boat-shaped Turkish flatbread baked in a stone-floored oven — emerges from the kitchen in several fillings: kıymalı (minced meat with onion and tomato), kaşarlı (melted yellow cheese), yumurtalı (egg with butter poured into the hollow during baking), and mixed variants combining meat with cheese or vegetables. Each pide is roughly 40 centimetres in length and is best shared or consumed as a full meal by a hungry solo diner. The dough is made fresh each morning and rolled to order before baking, giving the crust a char on the underside without drying the interior. Lahmacun — a thinner, crispier round topped with very finely spiced meat paste and baked until the edges darken — is served rolled around fresh parsley, sliced tomato, and a wedge of lemon. The cooking is fast: lahmacun comes out of the oven in three to four minutes and pide in eight to ten. The restaurant is a high-speed operation — queues form and clear quickly. Prices are among the lowest in the city: a full pide costs ₺80–160 and lahmacun runs ₺40–80 per round. No alcohol. Ayran is the canonical pairing with both dishes. Open from 07:00, making it one of the few savoury breakfast options in the city centre.
