Ihlara Valley & Belisırma Riverside Food Walk

The Ihlara Valley & Belisırma Riverside Food Walk combines a full-day traverse of one of Turkey's most dramatic volcanic gorges with a sequence of traditional Anatolian food stops spread across six to seven hours. The walk begins at the main Ihlara valley entrance (Ihlara Vadisi Ana Giriş, 68500 Ihlara/Güzelyurt, Aksaray), where participants purchase an entry ticket at the booth and descend a stone staircase into the canyon. The gorge walls rise up to 100 metres on either side of the Melendiz River, and the valley floor path follows the river downstream past dozens of Byzantine cave churches carved into the tuff cliffs. The first food stop is a village gözleme stand positioned at the entrance area, where freshly rolled flatbread is cooked on a wood-fired griddle and filled with white cheese, spinach, or potato — an ideal trail snack before the gorge walk begins. Following approximately four kilometres of the riverside path leads to Belisırma village and its cluster of open-air restaurants built on timber platforms set directly over the Melendiz River. The most established venues are Belisırma Aslan Restaurant and Belisırma Star Restaurant, both serving whole river trout caught upstream, accompanied by village bread (ekmek), wild greens salad, and glasses of freshly brewed çay. The cuisine is characteristic of Central Anatolian village cooking: simple, ingredient-led, and reliant on wood fire and river produce. The walk is entirely self-guided; the valley entrance ticket (₺340 at time of publication) covers access to all cave churches along the route. The return journey follows the same path back to the entrance, or a taxi can be arranged from Belisırma village. The experience is best undertaken between April and October, when the riverside restaurants are in full operation and the gorge path is dry underfoot.
