Los Helechos

Los Helechos is an old-quarter classic on Calle Mercado, just steps from the Pamplona market building and embedded in the daily commercial life of the old town. The bar-restaurant hybrid occupies a double role: a counter where stand-up pintxos are served at typical pintxos bar prices, and a small dining room at the back where a more complete sit-down meal can be ordered. The pintxos counter is the main draw, offering a rotating selection of cold assembled bites and hot kitchen pintxos at prices ranging from €1.50 to €2.50 each. The gilda — the Basque salt classic of an olive, a pickled anchovy, and a green guindilla pepper threaded on a toothpick — is done here with quality ingredients and the straightforward confidence of a bar that knows exactly what it is doing. Croquetas caseras, made fresh daily with a thin crisp shell and a creamy béchamel interior, demonstrate why this humble preparation, when executed properly, is one of the great dishes of Spanish cooking. Patatas bravas dressed in a spicy Navarrese-style sauce complete a short menu of pintxos classics. The atmosphere is local, unpretentious, and loud during peak hours. The wine list is minimal — Navarra rosado and house red by the glass. Beer is widely drunk here. No reservations are accepted; this is a street-level, counter-service experience.
