Bar El Jaraíz

Bar El Jaraíz is the archetypal village bar of La Vera, the fertile valley running along the southern slopes of the Sierra de Gredos in northern Extremadura that has given the world pimentón de la Vera — the smoked paprika produced here using traditional oak-smoke drying methods and recognised as one of Spain's most distinctive regional flavourings. Situated on the main street of Jarandilla de la Vera, the village best known for the castle-parador where Emperor Charles V spent his final years before moving to the monastery of Yuste, the bar serves a clientele that is overwhelmingly local: farmers, fruit growers and the residents of a town that still operates at a rhythm governed by the land and the agricultural calendar. The chistorra con pimentón de la Vera is the house centrepiece: the thin, fast-cured sausage seasoned with the valley's iconic smoked paprika, its characteristic sweet-smoke-heat combination making it one of the most intensely flavoured preparations in the region. Tostada de morcilla — toast laden with blood sausage equally seasoned with Vera paprika — delivers the same flavour register in a different vehicle. Codillo al horno, slow-roasted pork knuckle, is available for those wanting something more substantial. The bar itself is small and unpretentious: a counter, a few tables, a television and the ease of a place that has been serving the same community for decades.
