Mercado Hidalgo is Veracruz's oldest covered market, and its interior fonda counters function as an informal seafood food hall rather than a single restaurant, each family-run stall cooking its own version of arroz a la tumbada, caldo de mariscos, and jaibas rellenas from that morning's catch. There is no single chef or tasting menu here; the draw is the freshness and low prices that come from buying fish directly from the market's seafood vendors a few stalls away. Seating is simple counter and stool arrangements at each fonda, with open kitchens in full view, market noise and foot traffic throughout, and no dress code whatsoever — this is workday, market-hall dining. There is no wine list; drinks run to aguas frescas, beer, and soft drinks. Reservations do not apply, since each fonda serves whoever sits down at its counter, and the best approach is to walk the row of stalls and pick the one with the busiest turnover and freshest-looking catch on ice.
