Alcalde is chef Francisco Ruano's flagship in Guadalajara, Jalisco, and one of the most decorated restaurants in Mexico, having placed repeatedly on Latin America's 50 Best Restaurants list. Ruano trained in Spain under Andoni Luis Aduriz at Mugaritz before returning home to reinterpret Jalisco's indigenous corn, chile, and lake-fish traditions through a modern, technique-driven lens. Signature dishes include birria de res served over tortillas made from blue corn nixtamalized in house, a tostada de trucha with aguachile that plays smoked trout against citrus heat, and a wild mushroom caldo built from a broth simmered for days. The dining room occupies a converted mid-century house with an open kitchen, an interior garden, and a mix of counter and table seating; the mood is polished but unstuffy, with smart-casual dress and a low, conversational noise level even when full. The beverage programme leans heavily on small-batch mezcal and raicilla alongside a curated Mexican and Old World wine list chosen to match the kitchen's smoky, acidic flavor profile.
