Pastes Márquez is a longstanding counter on Boulevard Everardo Márquez in the center of Real del Monte, part of the dense cluster of paste bakeries that has made the town synonymous with the dish across Hidalgo and central Mexico. The kitchen bakes savory pastes filled with picadillo and with queso con rajas, alongside a sweet guayaba (guava) version for those wanting a dessert-style paste. As with the town's other paste counters, the setting is informal: a walk-up window or small storefront rather than a table-service dining room, with no wine list, cocktail program, or dress code to speak of. The experience is built around speed and portability, with pastes handed over wrapped in paper moments after baking. No reservation system operates, since the format does not require one. Real del Monte's paste tradition traces to Cornish miners who settled the town in the 19th century to work its silver mines, and counters like this one have kept the recipe largely unchanged since.
