The paste, a baked pastry descended from the Cornish pasty that Cornish miners brought to the Hidalgo silver district in the 19th century, is the sole reason to visit: the counter turns out savory versions filled with picadillo (spiced ground beef) and mole, alongside sweet versions such as paste dulce de piña filled with pineapple. The shop is a walk-up bakery rather than a sit-down restaurant, with a simple counter, a few stools, and a steady flow of locals and day-trippers from Pachuca.
