Pastes del Minero takes its name directly from the mining heritage that brought the paste to Real del Monte: Cornish miners recruited to work the local silver veins in the 1820s carried the recipe with them, and the dish has remained a symbol of the town ever since. The counter, set on the Camino Real in the town center, bakes a rotating range of savory and sweet versions, with the paste de mole and paste de papa con chorizo (potato and chorizo) standing out among the savory options and a rice-pudding sweet paste closing out the menu. The format is a simple bakery counter rather than a table-service restaurant, and there is no wine or bar program. The dining experience, such as it is, means eating a hand-held pastry while walking the town's steep, colorful streets or sitting briefly on a nearby bench. No booking system exists, and none is needed for a counter of this kind. The shop's name itself functions as a small history lesson for visitors, tying the food directly to the silver-mining boom that shaped Real del Monte's British-influenced architecture and culture.
