Doi Shuzo Kaiun Sake Brewery Tour and Tasting

Doi Shuzo Brewery has produced sake under the Kaiun label in Kakegawa, Shizuoka, for generations and runs a 1.5 to 2 hour brewery tour and tasting for visitors, most active during the December-to-March brewing season when the largely open-air facility is in full production. The tour walks participants through the brewing process specific to Doi Shuzo's junmai ginjo methods, including the rice polishing, koji preparation and fermentation stages, with the open-sided architecture of the facility allowing views of the equipment and, in season, the steam and activity of an active brew. A staff member explains how the Kaiun label built its reputation, alongside the brewery's related Iira and Takatenjin lines, before leading a guided tasting flight that typically includes samples from all three labels, letting visitors compare differences in rice polishing ratio, sweetness and aroma. The tour includes the facility walk-through and the tasting flight; bottle purchases at brewery prices are available afterward but are not included in the tour cost, and a designated driver or non-alcoholic tasting option should be arranged in advance for visitors who are driving. Guiding is in Japanese, with some English support materials available for the process explanation; the facility involves standing and walking on solid, mostly flat flooring, making it manageable for most visitors, though the open-air sections mean the experience is affected by outdoor temperature. Visiting during the December-to-March brewing season offers the most active view of production, while an off-season visit still includes the full tasting flight but without live brewing activity. Kakegawa is reachable from central Shizuoka by train and a short taxi or bus ride to the brewery.
