Sake Brewery Guided Tasting

The Sake Brewery Guided Tasting takes place at local breweries in the Izumo City area of Shimane Prefecture, a region with a long sake-brewing tradition tied to the area's mythological association with sake's origins near Izumo Taisha. Visits are arranged through the Izumo Tourism Association and should be reserved at least two days ahead, since individual breweries set their own tour schedules. The 1.5-to-2-hour visit includes a guided walkthrough of the brewery's production areas, explaining the rice-polishing, fermentation, and pressing steps particular to the house's style, with guiding typically in Japanese accompanied by an English pamphlet at most participating breweries. The tasting itself covers three to five sake varieties spanning different rice-polishing ratios and styles, along with a plum wine sample, giving visitors a range from dry junmai styles to sweeter options in a single sitting; the format is a tasting flight rather than a paired meal, so no food course is included. Brewery tours are often free, with the ¥1,000 fee covering the guided tasting flight; bottles can be purchased on site afterward at additional cost, and higher tastings up to ¥2,500 may include rarer or limited releases. Not included are transport to the brewery and any bottles taken home. Groups are kept small to move comfortably through working production areas, and the October–March brewing season is the best time to visit, since this is when the breweries are actively producing sake and staff can speak to the process in real time; outside this window, tours focus more on the facility and tasting than live production. Because sake tastings involve alcohol, non-drinkers or those under Japan's legal drinking age of 20 should confirm in advance whether a non-alcoholic tasting or facility-only tour can be arranged.
