Minematsu Shuzo

Minematsu Shuzo is a sake brewery on Sakagura-dori (Sake Brewery Street) in Hizen Hamashuku, Kashima, Saga Prefecture, one of several historic breweries clustered along the same stretch of preserved townscape. Unlike some of its neighbors, Minematsu Shuzo runs a free-pour tasting counter, letting visitors sample its junmai ginjo and other sake styles without booking a formal tour, with sake kasu pickles offered as a simple accompaniment made from the brewery's own fermentation lees. The beverage programme is the entire draw — there is no restaurant menu beyond the tasting counter and its small snack pairings — and the sake itself ranges from lighter junmai styles to richer ginjo grades. The setting is an old wooden brewery building along the historic street, with a quiet, low-key atmosphere and no dress code; this is a casual tasting stop rather than a destination meal. No reservation is required for the tasting counter, making it one of the more spontaneous stops on a Sakagura-dori brewery walk, though the brewery closes over the New Year holidays. Because tasting is free-pour and unstructured, visitors can move at their own pace, making it easy to combine a stop here with several of the neighboring breweries on the same street in a single afternoon.
