Schwarzwaldstube at Hotel Traube Tonbach in Baiersbronn, in the northern Black Forest of Baden-Württemberg, is one of Germany's most venerable fine dining institutions. The restaurant has held three Michelin stars for decades and has long occupied a position at the apex of German haute cuisine. The kitchen has recently transitioned from the legendary Harald Wohlfahrt, who built its reputation over more than thirty years, to a new chapter under chefs Torsten Michel and Kevin Fehling (who subsequently opened The Table in Hamburg). The cuisine remains rooted in classical French-German haute tradition: exceptional technique, luxurious ingredients, immaculate service, and a wine programme of extraordinary depth. The dining room inhabits the character of a refined Black Forest hunting lodge — dark wood, warm light, and intimate table spacing — with a formality of service that belongs to the grand European restaurant tradition. Seasonal ingredients from the surrounding forest — game, mushrooms, wild herbs, and Black Forest venison — feature alongside truffle, lobster, and the finest French and German produce. Tasting menus run to eight or more courses. The surrounding Tonbach valley setting is deeply scenic, and many guests combine dinner with an overnight stay at Hotel Traube Tonbach. Reservations must be made months in advance.
