VOTUM holds two Michelin stars and occupies a glass-walled dining room inside the historic Leineschloss, the Baroque palace on the banks of the Leine that now houses Lower Saxony's state parliament. The kitchen builds a single seasonal tasting menu around regional and North German produce -- game from the Lueneburg Heath, North Sea fish, and vegetables sourced from nearby market gardens -- reworked with modern French technique into a menu that changes several times a year. Signature courses have included a Heath venison preparation and a North Sea turbot dish paired with a beurre blanc built from regional herbs; the multi-course tasting format is the only way to dine, with no a la carte option. The dining room itself is calm and formal, with floor-to-ceiling windows overlooking the Leine, white linen, and a low level of ambient noise that suits the pace of a multi-hour tasting menu; a terrace opens onto the river in summer. The wine list runs deep into German Riesling and Spaetburgunder alongside a broader European selection, with a sommelier-led pairing offered alongside every tasting menu. Given its two-star status, VOTUM is one of the hardest tables to secure in Hannover: weekend dinner reservations should be made several weeks in advance, and the restaurant is closed Sunday and Monday.
