Diners then carry their tray to the granite quay wall and eat standing, looking out over the bay at low tide to see the oyster beds themselves stretching across the exposed sand. Bouchot mussel poles — the vertical posts from which rope-grown mussels hang in the tidal channels — are also visible at low water, and shelled moules de bouchot can sometimes be bought at the stalls alongside the oysters.
