Yixingzhang Daokou Roast Chicken (义兴张道口烧鸡)

Yixingzhang Daokou Roast Chicken (义兴张道口烧鸡) is a shop in Daokou Town (道口镇) in Hua County (滑县), Anyang, in northern Henan Province. Daokou roast chicken is one of China's best-known regional chicken dishes, and the tradition is dated to 1692. The name Yixingzhang refers to the historic house most closely associated with the recipe. The chicken is not roasted in the Western sense but braised with spices until the meat falls from the bone, and it is sold whole for takeaway rather than served in a formal dining room.

The signature product is the whole Daokou chicken (道口烧鸡), priced at about ¥60 to ¥90. The bird is first fried to give it a golden colour, then simmered slowly in a stock seasoned with a blend of spices, so that the flesh is tender and deeply flavoured. It is typically eaten by pulling the meat from the bone by hand, either warm or at room temperature, and it keeps well, which makes it a popular gift and travel food. Many visitors buy a chicken to carry back to their hotel or to onward destinations.

The venue is a shop counter aimed at takeaway, with little in the way of a dining room. The atmosphere is that of a working local business, and there is no dress code.
