Gushi is a county known for its goose farming, and the braised goose pieces (鹅块) are the signature dish of the Xinyang area. The restaurants are typically family-run and modest, and visitors are advised to look for signs marked 鹅块, since the same dish is cooked by many small businesses rather than one single venue.

The signature dish is the braised goose hotpot (鹅块), priced at about ¥98 to ¥168 depending on the size of the pot. The goose is cut into pieces and braised with soy sauce and seasonings until rich and tender, then served hot in a pot, often with vegetables, tofu or noodles added to the broth as the meal goes on. The dish is meant for sharing among several diners, and it is warming and hearty, making it especially popular in cooler months. Goose is richer and gamier than chicken, and the braise tempers that with a savoury, slightly sweet sauce.

The atmosphere is that of a local family restaurant: casual, sociable and often noisy, with round tables and a steady flow of regional customers. There is no dress code.
