Paper Daisy is the signature restaurant of Halcyon House, a boutique designer hotel at 21 Heather Street in Cabarita Beach, northern New South Wales. Positioned steps from one of the Northern Rivers coast's most beautiful beaches, the restaurant has established a national reputation for refined modern Australian cooking that showcases the produce of the region's farms, fishermen, and growers within an architecturally considered beachside setting.

The kitchen operates under a strong regional produce philosophy, building menus that reflect both the season and the immediate geography of the Northern Rivers coast and hinterland. Kingfish crudo — raw fish from local waters, dressed with native herbs, finger lime, and light citrus — exemplifies the kitchen's luminous, produce-led approach to the coastline's bounty. Grass-fed beef from Northern Rivers hinterland farms appears alongside carefully sourced Queensland and New South Wales seafood. The tasting menu traces the region's produce across multiple courses, moving from lighter, brighter preparations toward richer main course proteins and plant-forward sides. The bread programme uses local grains; desserts feature native Australian ingredients including finger lime, Davidson plum, and lemon myrtle.
