Mamak Sydney

Mamak is a Malaysian restaurant in Haymarket on the southern edge of Sydney's CBD, immediately adjacent to Chinatown, and one of the city's best-known casual dining institutions. Opened in 2007, the restaurant quickly became famous for its hawker-style Malaysian cooking at genuinely low prices and for the queues that form outside on Goulburn Street on most evenings. The kitchen specialises in roti canai — flatbreads cooked to order on a tawa griddle and served with rotating selections of dhal, curry sauce, and sambal for dipping. Watching the roti being hand-stretched and flipped at the open roti station near the entrance is a central part of the experience and one of Sydney's most distinctive street-level food theatrics. Nasi lemak — coconut rice served with sambal, fried chicken, boiled egg, fried anchovies, and roasted peanuts — is among the menu's centrepieces and represents one of Sydney's most authentic and affordable renditions of Malaysia's national dish. Satay is grilled over charcoal at a second open station; the chicken and beef skewers arrive with thick peanut sauce, compressed rice, and cucumber slices. Teh tarik, Malaysian pulled tea made by aerating sweetened black tea between containers to create a froth and reduce temperature, is the essential drink. The dining room is compact, communal, and loud — conversation competes with sizzling griddles and the energy of a busy kitchen. Mamak operates a walk-in only policy with no reservations, and queuing outside is standard on Friday and Saturday evenings. The restaurant has opened additional locations in Melbourne and Brisbane, but the original Haymarket venue retains its reputation as the most authentic expression of the concept.
