Matt's El Rancho at 2613 South Lamar Boulevard in South Austin has been an anchor of Austin's Tex-Mex landscape since 1952, when Matt Martinez Sr. opened the original location downtown. The South Lamar restaurant, which the family has operated for decades, is a sprawling, festively decorated space that can seat hundreds of guests across multiple dining rooms. The menu covers classic Tex-Mex—enchiladas, tacos al carbón, tamales, fajitas—executed with the confidence of a kitchen that has made these dishes tens of thousands of times. The single most famous item on the menu is the Bob Armstrong Dip, a queso fundido layered with seasoned ground beef, guacamole, and sour cream that Texas Monthly once called the best dip in the state. Austin politicians, musicians, UT professors, and families celebrating birthdays have all occupied these booths over the decades, giving Matt's a cross-generational social weight that newer restaurants cannot manufacture. The margaritas—frozen or on the rocks with fresh lime—are essential ordering. The kitchen does its best work at lunch, when the dining room is loud with regulars and the service is brisk.
