Pine State Biscuits is Portland, Oregon's most celebrated biscuit shop, operating multiple locations across the city with the SE Belmont Street location serving as a neighborhood anchor for inner Southeast Portland. Founded by three North Carolina transplants who missed the scratch-made Southern biscuits of home, the restaurant opened in 2006 at the Portland Farmers Market before expanding to brick-and-mortar locations. The biscuits are the foundation of everything: made from scratch daily with buttermilk and butter, they are tall, flaky, and rich without being heavy—the product of a recipe developed by bakers who grew up with the tradition rather than learned it academically. The Reggie is the restaurant's most famous construction: fried chicken, thick-cut bacon, cheddar cheese, and housemade gravy piled onto a split biscuit in a combination that became a Portland culinary icon within the first year of opening. The Goodie Two Shoes—egg, cheese, and housemade jam on a biscuit—is the more restrained option that showcases the biscuit itself without competing toppings. Biscuits and Gravy, using housemade pork sausage gravy, is the most traditional preparation and the best introduction for guests unfamiliar with Southern biscuit culture. Pine State sources locally where possible, using Oregon eggs and regional dairy, and the menu changes slightly by location and season.
