Since then, the operation has expanded to several locations across Santa Fe and the Española Valley while maintaining the family's commitment to authentic, unpretentious New Mexican cooking at genuinely low prices. The format is counter service — plastic trays, metal chairs, outdoor or semi-covered seating — but the food delivers some of the most honest New Mexican cooking available anywhere in the state. Green chile burritos are the house specialty: a substantial flour tortilla wrapped around slow-cooked meat (pork, beef, or chicken), potatoes, and enough roasted green chile to satisfy seasoned New Mexico palates, all for under $12. Red chile tamales are slow-cooked from scratch, and chile rellenos are battered and fried in-house to order. The Rivera family sources chiles directly from New Mexico growers, and the seasonal variation in heat and flavor is palpable from visit to visit.
