The restaurant bears his name and honors the building's history with a dining room that features the original 1912 adobe architecture: low ceilings, exposed vigas, fireplace alcoves, and thick walls that maintain a cool atmosphere in summer and hold the warmth of burning piñon in winter. The menu covers breakfast, lunch, and dinner, making Doc Martin's one of the few full-service all-day dining options in the center of Taos. The kitchen draws on both traditional New Mexican and contemporary American cooking: stacked green chile enchiladas and huevos rancheros anchor the New Mexican side, while wild game sausage with eggs at breakfast and piñon nut cake at dessert reflect the kitchen's engagement with regional ingredients.
