Adobe Bar at the Historic Taos Inn

The Adobe Bar at the Historic Taos Inn is one of New Mexico's most celebrated drinking establishments, set within the atrium of a National Historic Landmark at 125 Paseo del Pueblo Norte in the heart of downtown Taos. The inn dates to 1936, and the bar's adobe-walled interior — featuring a crackling fireplace, exposed vigas overhead, and a terracotta-tiled floor — has welcomed artists, writers, and travelers for generations. The atmosphere blends old New Mexico character with a genuinely lively local scene: regulars mingle with visitors fresh from the galleries along Ledoux Street, and the room fills quickly after 5pm on weekends.

The drinks program leans firmly into regional identity. The signature Cowboy Buddha cocktail — a house creation that has been on the menu for decades — is the most closely associated drink with the bar. New Mexico craft beers rotate on draft alongside a handful of local wines by the glass. Classic cocktails are available, though regulars tend toward the house specialties.
