Lamb rogan josh, slow-cooked with Kashmiri spices in a deeply aromatic sauce, is the preparation most closely associated with The Oven and is consistently cited by regulars as the kitchen's highest expression. Chicken tikka masala provides a reliable and well-executed entry point for those less familiar with North Indian cooking, and the garlic naan, baked fresh in the tandoor, has become an almost compulsory accompaniment to any order at the table.
