Coopersmith's Pub and Brewing

Coopersmith's Pub and Brewing at 5 Old Town Square in Fort Collins has been the anchor of the city's craft beer culture since 1989 — predating Fort Collins' emergence as one of the most acclaimed craft beer cities in the United States. The brewpub occupies a prime corner position on Old Town Square, Fort Collins' historic pedestrian plaza, and has served as the social center of the downtown community for more than three decades.

The brewery produces a rotating lineup of house beers brewed on-site, typically presenting 10 to 15 different styles at any given time. The craft beer sampler ($14) is the standard introduction — a flight of five to six beers representing the current tap list, chosen to show range across ale styles, wheat beers, seasonals, and lagers. The green chile burger ($15) is the menu's most Colorado-specific item, incorporating the state's signature Pueblo green chile into a standard pub burger in a preparation that reflects Fort Collins' position at the cultural crossroads between traditional Colorado ranching and contemporary Colorado food culture.
