Along the edge of Parque de Santa Lucía in Mérida's historic center, a cluster of street vendors roll fresh marquesitas to order on portable griddles, cranking the wafer-thin crepes tight around Edam cheese and a choice of sweet filling, most commonly cajeta (caramel) or Nutella. There is no restaurant, chef, or dining room here -- this is pure street food, sold from carts set up along the park's edge only on Thursday through Sunday evenings, from 6PM to 11PM, coinciding with the weekly cultural events and live music Santa Lucía hosts. Seating is limited to the park's benches and surrounding steps rather than dedicated tables, and the experience is inherently casual and social, often enjoyed while watching the plaza's performances. There is no beverage program tied to the carts themselves, though nearby bars and restaurants around the park offer drinks separately. Reservations do not apply, since this is walk-up cart service; visitors simply queue at whichever cart looks busiest, which is usually a reliable sign of freshness and turnover. Prices are low, with a single marquesita costing around 35 MXN, making it an accessible dessert stop after dinner at one of the restaurants facing the park, such as Apoala or Oliva Enoteca.
