Tacos El Ivan

Tacos El Ivan is a late-night taco stand on Avenida Revolución in Centro Sayulita, widely regarded as a local institution on Mexico's Riviera Nayarit coast. It is a street-food operation rather than a restaurant with a chef or formal kitchen — the draw is a trompo of marinated pork spinning over an open flame, shaved to order into fresh corn tortillas. The tacos al pastor, topped simply with onion, cilantro, and pineapple, are the only real order here, and their consistency over years of late-night service has built the stand's reputation. There is no dining room in the traditional sense: seating is limited to a handful of stools or standing room around the stand, with the atmosphere loud, informal, and social, drawing a mix of locals, service-industry workers finishing shifts, and visitors looking for an authentic late-night bite. There is no beverage program at all — this is a food stand, and drinks, if available, are limited to bottled sodas or water. Reservations are not accepted and would not make sense for a walk-up stand; the only strategy is showing up between 6PM and 1AM when the trompo is running, with the busiest stretch typically after 10PM.
