Zibu Acapulco

Zibu sits on a tiered hillside along Acapulco's Carretera Escénica in the state of Guerrero, Mexico, its open-air palapa roofs stepping down toward the water so that most tables face Acapulco Bay. The kitchen focuses on contemporary Mexican seafood, with signature dishes including pescado a la talla (fish butterflied, marinated in adobo, and grilled), coconut shrimp, and huachinango zarandeado, a whole red snapper grilled over coals in the coastal Guerrero style. The dining room is casual-elegant, lit by candles and torches after dark, with soft live music some nights and a noise level that stays conversational even when full. The bar leans into mezcal flights and tropical cocktails alongside a compact, Mexico-focused wine list built to pair with grilled fish and shellfish. Because bay-view tables are the draw, especially at sunset, reservations are recommended for dinner and worth making a day or two ahead during the high season from November through April; walk-ins are more feasible for lunch.
