Casa Valadez has anchored the Jardín de la Unión in Guanajuato City for decades and is widely credited as the birthplace of enchiladas mineras, the shredded-beef, guajillo-chile enchiladas that define the state's home cooking. The kitchen works from a family recipe book rather than a single celebrity chef, leaning on generations of cooks trained in traditional Bajío technique. Signature dishes include the original enchiladas mineras topped with a fried egg and potatoes, cecina enchilada made with thin, salted beef, and chiles rellenos stuffed with cheese and bathed in tomato sauce. The dining room spills onto a covered terrace directly facing the neoclassical Teatro Juárez, making it one of the most photographed tables in the city; inside, the room is formal but not stuffy, with white tablecloths, tiled floors and wrought-iron chandeliers. Dress code is smart-casual and noise levels rise in the evening as the terrace fills with theatergoers before performances. There is no sommelier program, but the restaurant pours a solid list of Mexican wines and mezcals alongside classic margaritas. Reservations are not required for indoor seating but are strongly advised for terrace tables at dinner and during festivals such as the Festival Internacional Cervantino, when tables should be booked at least two to three days ahead.
