The North Aegean is Greece's most authentically Greek island region, a scattered archipelago of forested mountains, medieval stone villages, Byzantine monasteries, and crystalline bays stretching along Turkey's western coast. Lesbos, Chios, Samos, Ikaria, and Lemnos each carry distinct identities shaped by centuries of Greek, Byzantine, Ottoman, and ancient civilisation.
North Aegean cuisine is among Greece's most distinctive — defined by three island identities. Lesbos is synonymous with ouzo (the island produces 60% of Greece's supply), premium extra-virgin olive oil, and mezedes culture where small shared plates of smoked fish, preserved meats, and seasonal vegetables accompany slow afternoon drinks. Chios is unique in world cuisine for its mastic production — the crystallised resin of the Pistacia lentiscus tree found only in the island's southern Mastichochoria villages, used in everything from gum to liqueur to savoury marinades. Samos produces one of the world's great dessert wines — the golden Muscat 'Nectar' label — alongside fresh seafood from the island's clear straits. Ikaria's Blue Zone diet, linked to the island's extraordinary longevity statistics, centres on olive oil, legumes, wild herbs, small amounts of goat meat, and locally made wine consumed in convivial social settings.
Must-try dishes
Iconic dishes that define North Aegean.
Mezedes platter with ouzo
The definitive Lesbos experience — multiple small plates of smoked fish, cheese, preserved vegetables, and fried bites, consumed slowly with a carafe of local ouzo over 2–3 hours.
Mastic products
Try mastic in every form on Chios: gum, loukoumades, ice cream, liqueur, and savoury marinades. Buy direct from village producers in the Mastichochoria.
Samos Muscat Nectar
The island's golden PDO dessert wine, produced from Muscat Blanc à Petits Grains grapes. Buy at the Samos Wine Cooperative in Malagari (near Vathy, open for tastings).
Soufiko (Ikarian ratatouille)
A slow-cooked medley of courgettes, peppers, aubergines, tomatoes, and wild herbs — the quintessential Blue Zone dish.
Lemnos kalathaki cheese
A PDO-protected fresh white cheese from Lemnos, softer and saltier than feta, sold in small baskets. Exceptional when grilled (saganaki).
Sardines of Lesbos
Lesbos sardines, preserved in olive oil, are considered among Greece's finest. Available in tins at every souvenir shop.

Dining etiquette & tips
Navigate the local food scene confidently.
Lunch is the main meal — served 13:00–15:30. Dinner starts late by northern European standards: 21:00 is normal, 22:00 not unusual.
In mezedes tavernas, order multiple small plates to share rather than a single main course.
Fish is priced by weight (per kilogram) on the menu — ask to see the fish and have it weighed before ordering.
Tap water is safe in main towns; still acceptable to ask for a bottle. House wine (open wine) is almost always local and good value.
Tipping: 10% is appreciated but not obligatory. Rounding up the bill is common practice.
- Vegetarian
- Well served by Greek cuisine — horta (wild greens), legume soups, salads, and pastries are plentiful. Ask for nistisima (fasting dishes) which are always vegetarian.
- Vegan
- More challenging but manageable. Legume soups, salads, and grilled vegetables are available everywhere. Avoid sauces as many contain butter or eggs.
- Gluten free
- Difficult — bread, pita, and pastry are ubiquitous. Rice dishes, grilled fish, salads, and legumes are safe options.
- Halal
- Not widely available. Seafood is a safe choice. Supermarkets in Mytilini and Chios Town carry some products.
