The cooking is traditional Greek with a particular emphasis on the baked and slow-cooked dishes that define the best of the island's domestic food culture: stifado, the braised beef or rabbit dish with sweet onions and allspice, given a low simmer of several hours; lamb kleftiko, sealed in a parcel with herbs and lemon and cooked until the meat separates from the bone with the gentlest pressure; and ladopita, a traditional Lefkadan speciality that is either a sweet cake or a savoury pastry depending on the version — the sweet variety made with olive oil, honey, and sesame is the more unusual and memorable of the two.
